In a small bowl, whisk together the hummus and yogurt, set aside.

Place a pizza stone on the bottom rack of a cold oven.
Preheat oven to 500 degrees F. Flour your hands and surface and pat dough into a 10-inch round.
Sprinkle cornmeal on a cutting board or baking sheet and place dough on top.

Pierce dough with a fork several times and then transfer to the pre-heated pizza stone in the oven.
Bake for 5 minutes.
Carefully remove pizza stone from oven and spoon the BBQ sauce evenly over the crust.

Top with chicken, onion, and cheese.
Bake for 10 minutes or until cheese melts and crust browns.
Top with cilantro, let cool slightly, and slice.
Yield 4 servings (8 slices, 2 slices per serving).
Heat oil in a large skillet or wok over medium-high heat.
Add shallot and garlic and cook, stirring constantly, for 1-2 minutes, until translucent and aromatic.
Add peas and carrots and soy sauce and cook, stirring constantly until vegetables are crisp-tender.
Remove from heat and garnish with cilantro, if desired.

Pour the rest of the enchilada sauce over the enchiladas and bake 15 minutes.
Carefully remove pan from oven and evenly sprinkle with cheese.
Return to oven and bake another 5-6 minutes, or until heated through and cheese melts.

Serves 4 (2 enchiladas per serving).
Heat olive oil in a large skillet over medium-high heat.
Add onion and cook, stirring often, 4-5 minutes until beginning to turn golden-brown.
Add garlic and Italian herb blend and cook another minute, stirring constantly.
Add spinach and cook, stirring often, just until it begins to wilt.
Season with salt and pepper, to taste, if needed.
Sprinkle with Parmesan cheese and basil, if desired, and serve immediately.
