Preheat oven to 400 F. Prepare a rimmed baking sheet with parchment paper.
Saute onions in olive oil in a large skillet over medium heat until tender, about 7 minutes.
Add garlic, saute for another minute.
Add eggplant and saute for another 15 minutes or until tender.
Transfer to the fridge for at least 30 minutes to allow the flaxseeds to soak up the moisture.
Remove mixture from the fridge and mold the mixture into 6 burgers.
Place burgers on the prepared baking sheet and bake for 30 minutes.
Remove from oven and let burgers sit for 5 minutes before serving.
These burgers are soft and tender so use a wide spatula when serving.
Note: This is a critical step to ensure the burgers stick together!
Add cooked brown rice and mash again to combine mixture until it forms a thick ‘dough’.
Add egg, flaxseeds, onion, garlic, basil, salt and pepper; mix well to combine.
Heat oil in a large skillet over medium heat.
Add burgers and cook for 5 minutes on each side or until burgers are golden brown.
Remove from heat using a wide spatula and serve.
These burgers are soft and tender so be careful when serving!

Transfer mixture to a large bowl and use hands to form 4-6 burgers.
Transfer to the prepared baking sheet.
