Vegan Egg Scramble

One of my personal favorite breakfast recipes is this scramble.

It uses silken tofu instead of eggs, but tastes just as goodan excellent vegan option.

Heat a skillet and saute the peppers and onions for five minutes.

Add the rest of the ingredients and cook for about 8 to 10 minutes more.

I like to also top mine with salsa and black beans, or a sprinkle of cheese.

Sometimes Ill even serve it on toast.
