At the end of April, theSELF Dinner Clubis running a 5K to raise money for the Bronx Zoo.

This means early morningtraining sessions, post-work jogs and of course, eatinghealthy and energizing food.

So it’s only fitting that we devote this month’s edition of SELF Dinner Club to rev-you-up grub.

Okay, first things first.

On to our appetizer…

You know what they say about best-laid plans?

but we couldn’t find it anywhere.

The last-minute recipe:

When we pulled our appetizer out of the oven we made a dinner club discovery.

Over done Brussels sprouts (they turn a dark purple/brown) make some seriously good veggie chips.

Just sprinkle on a pinch of salt for ahealthy snack.

And the main course!

The best part about this recipe (other than how good it tastes) is how affordable it is.

Plus, it’s simple.

We combined the salmon, scallions, breadcrumbs and curry in a bowl and molded them into burgers.

If your patties are crumbling (ours were) add more breadcrumbs to bind the cakes.

It helps to add extra on the top and bottom so a hard outer crust forms while they cook.

Once you’ve molded the patties set them aside and move on to the brown rice.

(Brown rice packsfour times the fiberof white rice, helping you to stay full longer.)

Now it’s the fun part…cooking (and flipping!)

Once they are cooked through, they retain their shape–just hang in there!

The final touch was sauteed spinach with garlic (note: saute the garlic on LOW HEAT).

Also be aware that the spinach will wilt quickly so pile it in your frying pan.

Your energy-packed meal is served.

After a super satiating meal, our blueberry dessert was theperfect, light finishing touch.

We froze the mixture for 1.5 hours, which left it soupy (but delicious).

For a more sorbet-esque consistency, let freeze for 3+ hours.

Plus, we made everything in under an hour.

The perfect amp-up meal for spring?

It just might be our favorite SELF Dinner Club meal yet.
