While we’ve definitely eaten roasted chicken before, we’d never actually roasted a whole chicken.
If you’re a newbie to that kind of cooking, we’re just warning you now.

It always seemed like such a great thing to know how to do – roast a chicken.
We envisioned ourselves serving a perfectly browned chicken to a table full ofdinner partyguests.
We were already brainstorming all the meals we could make from leftovers!
We used a free-range, certified organic chicken from our local grocery store.
It’s easy to forget this when you just see sliced chicken, etc.
We couldn’t stop looking in the oven to see what it looked like.
We wanted it to be like a “magazine chicken”…perfectly golden.
It looked pretty good !
We were determined not to waste anything!
We’ll also experiment with more spices – maybe a curry spice rub or a garlic lime rub.
Here’s one bone we DIDN’T toss into the stock pot… make a wish!
