“Living on the road can make you feel quite displaced,” Potter admits.

A Vermont native, Potter helped Burlington-based Lake Champlain Chocolates develop her own chocolate bar, Grace Under Fire.
The blend of dark chocolate, salty pistachios and red pepper kicks almost as much ass as Potter does.

It fueled my passion for regional foods," Potter says.
“I use a potato peeler to create noodlelike pieces.
It reduces cooking time.”
“There are daily stresses on the road, but when everyone gets fed, everyone gets happy.
