You don’t have to wait until the morning to enjoy freshly scrambled eggs.

This scramble makes for a filling dinner too since each egg packs a whopping 6 grams of high-quality protein.

Saute about 5-10 minutes until onions become translucent and tender.

Add a large handful of baby spinach and 1 cup canned black beans.

Cook just until spinach wilts and beans warm through.

Add 4 lightly beaten large eggs and scramble until the eggs are cooked.

Remove from heat and sprinkle with 1/2 cup reduced-fat Monterey jack cheese and 1/2 cup salsa.

Pizza has a whole new flare when it is cooked right over the flames.

All you need are your ingredients, a metal grill grate and your campfire.

Place directly on the grill grate.

Cook until the cheese melts and the flatbread is heated through.Let cool slightly and slice into 6 wedges.

Vegetables of all kinds will have a great smoky flavor after cooking over an open fire.

Drizzle lightly with olive oil and season with Old Bay seasoning to taste.

Hot dogsare a campfire classic, but my spin on pigs-in-a-blanket makes them even more fun!

Then cook over the campfire until dough is golden brown and cooked through, rotating occasionally to cook evenly.

Serve with your favorite condiments.Serves 8.

Place 1 tablespoon olive oil and 1/4 cup popcorn kernels into an aluminum pie pan.

Remove from fire and season with salt, pepper, and garlic powder, to taste.Serves 2-4.

Cooking quesadillas in foil over the fire melts the cheese perfectly and gives them a great smoky flavor.

Fold the empty side of the tortilla over the topped side.

Serve immediately with more salsa and guacamole, if desired.Serves 2.

What would a camp out be without dessert?

Cut the tops off of eight large oranges.

Prepare a brownie batter according to the mix’s directions.

Place the tops back on the oranges and wrap each orange tightly in aluminum foil.

Place the oranges directly into the campfire and let bake for about 20-25 minutes.

Enjoy straight out of the peel or with ice cream.Serves 8.

Fill 2 pita pockets with your favorite fruit pie filling being careful not to get them too full.

Spread 2 teaspoons of almond butter along the inner opening of each pita pocket and press down to seal.

Cook for about 10 minutes or until warmed through.Serves 2.
