I’m kicking off the Cook-at-Home Challenge on a light note.
I’m headed to the beach this weekend, which means my first bikini day of the season.
The whole meal took less than 15 minutes to prep, and it was so delicious.

Last night I made the quick-pickled kale salad.
Yes, the name is funny.
I know many people have aversions tokale(hello, superfood!
It also packs 1.3g of fiber and a hearty helping of iron and calcium per cup.
then tossed in thechickpeas.
Once that was all mixed up, I made the dressing-easy enough!
As if the chickpeas weren’t enough for me, I topped the salad off with a bit ofhummus.
Hey it was late on a Thursday, a girl can indulge a bit, right?
Doesn’t this look good?
I highly recommend this salad.
What makes it even better is that it made enough for lunch today!

This week we trekked out to Brooklyn for a delicious cookout with a beautiful view.
On the menu: turkeyburgers(my contribution!
), salmon burgers, bison burgers and veggie burgers but I stuck with my original turkey.
One patty has 21 grams of protein plus it’s a great source of the antioxidant, selenium.
Actually cooking was simple–grill and go!
I added veggies and salsa (okay, and a glass of wine) and voila!
