I absolutely love soup.

So much that I think it should be considered its own food group.

She also clearly shares my passion for soup.

The soup was easy to make.

My final alteration to the recipe was the biggest: I swapped in butternut squash for carrots.

Plus I knew the squash would make for a slightly thicker, more luscious texture.

This recipe was a nice change of pace.

The Roasted Winter Vegetable and Arugula salad was even easier to throw together.

Note: In cold weather, coconut milk is solid at room temperature.

Warm coconut oil in a large pot over medium heat.

Add onions, and saute for 5 minutes or until golden.

Stir in curry powder, turmeric, and cilantro stems.

Add carrots, water, 1 1/4 cups coconut milk, and lemongrass-lime leaf bundle.

Raise heat to high and bring to a boil.

Cover pot, reduce heat to low, and simmer for 20 minutes or until carrots are tender.

Remove from heat and remove lemongrass-lime leaf bundle and compost.

Stir in the cayenne pepper if using.

MAKES ABOUT 1/2 CUP

Warm a medium skillet over medium heat.

Remove from skillet immediately and place in an electric spice grinder along with peppercorns; grind until fine.

Transfer to a bowl and add turmeric, ginger, and cayenne if using; mix well.

Store in a sealed glass jar; use within three months.

ROAST THE VEGETABLES: Preheat oven to 400oF.

Line 2 rimmed baking sheets with parchment paper and set aside.

Divide between trays, spreading vegetables out in a single layer, and roast for 20 minutes.

Stir, rotate trays, and roast for another 20 to 25 minutes or until vegetables are browning.

Remove from oven and set aside to cool.

MAKE THE DRESSING: Combine all dressing ingredients in a jar and shake to combine; set aside.

Drizzle dressing over the salad and toss again.
