One of the perks of working from home is the ability to have a hot lunch.

However, I need to test a recipe this afternoon, so my goal is to keep things fast.

Today, I use the quinoa I prepped over the weekend to make an easy stir-fry.

First, I heat a teaspoon of extra virgin olive oil in my mini nonstick skillet.

This is a favorite snack of mine because theprotein and fiberhelp me avoid that 3 P.M. energy dip.

Okay, so I’m a snacker.

Fingers are a better vessel for almond butter, anyway.

I could eat almond butter all day, so it’s important that I portion some out.

If I eat straight from the jar, I may never stop.

That’s why zucchini noodles have become such a favorite in our household.

I brown my meat in about four teaspoons of oil with a cup of cremini mushrooms.

Then I add about a cup of homemade tomato sauce I have stored in my freezer.

I let the sauce simmer until it thickens up a bit.

I divide the noodles between two plates and top them with parmigiano reggiano.

I love this meal because it’s meaty and satiating, but still feels light.

I need to snack before bed.

It’s a comfort thing and I don’t like to get hungry before I go to sleep.

I grab two Babybell cheese balls to eat in bed while we watch TV.

This is my standard before bed snack and it’s really my favorite.

I also just find that it’s a deeply comforting nightly routine for me.

I eat this before I brush my teeth and get ready for bed.
